BBQ Chicken Grilled Cheese

Apparently April was National Grilled Cheese Month. I guess I missed the memo! But frankly, every day is a good day for grilled cheese in my book so here we go in May. The other day, while trying to pull myself out of a recipe rut (hence my lack of posts), I began perusing one of my favorite food blogs, Domesticate Me, and stumbled upon a jaw dropping post about a dreamy BBQ Chicken Grilled Cheese!


Hello, lover.

This is one racy grilled cheese and only requires a few inexpensive ingredients you can find in any grocery store.

For 3 sandwiches, you’ll need:
2 tablespoons, divided
½ red onion, thinly sliced
1 1/2 cups of shredded chicken breast
1/2 cup barbecue sauce
1 cup shredded mozzarella cheese
1 cup shredded cheddar cheese
1 avocado, sliced
3 tablespoons fresh cilantro leaves
6 slices of bread of your choice (I used ciabatta but sour dough works as well)
And for Dipping:
Ranch Dressing
Barbecue Sauce

Now, embarking on this dish was a little tricky for me as I don’t own a panini press or George Foreman grill. Instead, I used a waffle maker. But not just any waffle maker….an animal shape waffle maker that my roommate won at a white elephant Christmas party last year.


{Side note: to make up for my lack of proper culinary tools, I toasted my bread ahead of time to give it the ultimate crispiness. After drizzling my ciabatta slices with olive oil, I popped them in the oven for about 10 minutes.}

Begin by slicing half a red onion into thin strips. Heat a teaspoon of olive oil in a pan over the stove and throw your onions on in there.


Allow your onions to simmer until caramelized. Meanwhile, you can prep your chicken!


A good ol’ Safeway rotisserie chicken makes this step easy as pie. However, if you’re feeling ambitious feel free to whip up your own fresh pollo. Pull about 1 and 1/2 cups of chicken off the bone and place into a large bowl. Mix in 1/2 a cup of barbecue sauce and voilà! You have the centerpiece of this meal.

Now you can begin to stack your bread with an array of rich toppings.

First, add one layer of cheese


Followed by a heap of chicken.


A few slices of avocado.


Then your caramelized red onions.


If you’re feeling adventurous, you can throw on a sprinkling of cilantro as well! Most importantly, finish off your sandwich with another heap of cheese! Your bread should be overflowing at this point.


Now your sandwich is ready to go on the panini press, or waffle maker in my case.


Smush your sandwich down lovingly until you have a heap of melty goodness!


Isn’t it a beauty?!

Serve hot off the press with ample amounts of ranch dressing and/or extra barbecue for dipping.


And bask in the glow of your company as they take their first bite of this epic grilled cheese.



I think that’s one happy camper.
